
For me, sharpening is a labor of love stemming from the gift at the age of six of a pocketknife from my father. He taught me how to use a knife safely for carving, whittling and having it on-hand (in my pocket, of course) when it was needed for odd jobs. Soon it became dull—all three blades—so I asked how to sharpen it and out of that the Strop Shop® evolved.
Every knife or pair of scissors I sharpen is treated as though it were my own, whether it is brand new, old, hand-crafted or mass-produced. Once the honing and stropping process is complete, your knife or scissors will perform as the maker intended and as you have a right to expect.
Why did I name my business The Strop Shop®? Stropping is the final, finishing stage of the sharpening process. It’s the stage that takes an edge to the point that it will shave. The Strop Shop® uses a four-stage process for knife and scissors sharpening (all done on a hand-operated machine): first the proper angle is determined, the condition of the edge is evaluated and a water stone is selected that will quickly reshape the edge. Following is the use of a finer water stone to hone the edge further and remove any natural burrs. Third is a much finer water stone that smoothes the edge and finally, the stropping stage which polishes the edge until it literally gleams in the light. At that stage the knife is ready to go to work.

Work is not limited to knives, however. The Strop Shop® is a full-service sharpening facility for home and business alike with virtually no limit to the items that can be sharpened. Being a Wüsthof knife and scissors sharpening center does not limit our ability to service other brands of knives and scissors.
